Sea Rocket
Latin: Cakile edentule
Description: Sea Rocket grows up to 50 cm tall, with stems that turn upward at the tips. Its fleshy, broad-stalked leaves alternate along the stem and reach up to 7 cm long. Blooming from July to September, the four-petaled flowers measure 1 cm across, range in colour from white to lavender, and grow in small clusters. The distinct seed heads are bulbous with a small, beaked tip.
Harvest and Sustainability: Found on shorelines in dune ecosystems. Harvested from mid-spring to early fall.
Uses: The leaves, stems, flowers, and seeds are all edible, offering a bold, sharp flavour reminiscent of Dijon mustard.
