Miner’s Lettuce
Latin: Claytonia perfoliata
Description: Miner’s Lettuce is easily recognized by its distinctive disc-shaped leaves perched atop slender stems, growing upright to heights of 5–30 cm. At the center of each leaf cluster, tiny white to pinkish flowers bloom. This plant thrives in moist meadows, forest clearings, and low-elevation woodlands.
Its name comes from early miners and settlers on the West Coast, who relied on it as a salad green.
Harvest and Uses: Miner’s Lettuce is harvested throughout spring and summer, commonly used as a fresh garnish or in salads. The entire plant is edible, offering a mild, slightly tangy flavour that pairs well with a variety of dishes.
