Apple & Nettle Jelly

Ingredients

  • 3 lbs apples

  • sugar

  • 9 cups of water

  • 4 cups packed nettle leaves

  • ¼ cup lemon juice

Prepare the Ingredients

  1. Coarsely chop the apples. 

  2. Place in a large pan with the nettles and water.

  3. Bring to a boil and simmer until soft.

  4. Strain fruit, without squeezing the bag.

 Prepare the Jelly

  1. Measure the juice.

  2. Add an equal amount of sugar (1 cup juice equals 1 cup sugar).

  3. Add lemon juice.

  4. Bring to a boil.

  5. Cook until temperature reaches 220 degrees.

  6. Check with the wrinkle test.

  7.  Skim off the foam and pour into jars.

  8. Process in boiling water bath for ten minutes.
