Alison’s Nettle Pesto

Ingredients

  • 3 cups nettle leaves

  • 6 garlic cloves

  • 1/2 cup walnuts

  • Dash each of salt and pepper

  • Dash lemon juice

  • 1 cup olive oil

  • 1 cup parmesan cheese

Prepare Pesto

  1. Steam or blanch (very slightly) 3 cups nettle leaves (No stems)

  2. Process in the food processor, in the following order:

    • garlic cloves

    • walnuts

    • Steamed nettle

    • salt and pepper

    • lemon juice

  3. While the blade is turning, slowly add up to 1 cup olive oil.

  4. Then add 1 cup parmesan.
